Our Casentino Truffle<\/h2>\n\n\n\n

In the heart of Casentino, among the hills of Santa Sofia, we cultivate truffles with a simple idea: to work well, slowly, and in harmony with the woodland. Our truffle orchard faces south-east, in a unique and still authentic setting, within the Casentinesi Forests National Park.<\/p>\n\n\n\n

Here the soil, the air and nature\u2019s rhythms set the rules\u2014we bring care, patience and respect.<\/p>\n\n\n\n

A truffle orchard born from restoring the land<\/h2>\n\n\n\n

When we began, the land had been uncultivated for more than twenty years. Instead of \u201cforcing\u201d nature, we chose a restoration approach: clearing the area, rebuilding soil structure, and creating the right conditions for truffles to return as the true protagonists, as tradition has always been in these areas.<\/p>\n\n\n\n

It\u2019s a long process\u2014but it is precisely this slowness that makes it real.<\/p>\n\n\n\n

Black Truffle (Tuber melanosporum)<\/h2>\n\n\n\n

This is the star: the prized black truffle (Tuber melanosporum). Intense, elegant and wonderfully aromatic\u2014it tastes of woodland, hazelnut and rich earth. It\u2019s the truffle we love to bring to the table and share with our guests, because it speaks directly of the place where it is born.<\/p>\n\n\n\n

From the woodland to the table<\/h2>\n\n\n\n

When the season allows, truffle becomes an experience: we use it in our kitchen, pair it with our wines, and let guests discover it in a simple, genuine way\u2014without excess. For us, truffle isn\u2019t \u201cluxury\u201d: it\u2019s territory, and one of the most sincere ways this land tells its story.<\/p>\n\n\n\n
